#WIAW - Food Prep and a Weekend Away

This weekend I was out town for the Toronto Tough Mudder event. I went up Friday afternoon to get set up, and then spent the rest of weekend chatting with racers, stuffing them full of Clif Bar delicious-ness, and staying in a hotel.

As you can see we hardly had any fun at all. It is a tough job but somebody's got to do it.

I was determined to stay on top of my tummy troubles while away. The past 2 weekends had ended in tummy disaster. And since I was sharing a room with my fellow Clif Bar work-ees I didn't exactly want to keep them up all night with my retching. Umm can you say worst Roommate EVER. So I made sure to come prepared. I packed a cooler full of easy, healthy, gluten-free/diary-free meals. Here is how my meal prepping went down.

For Dinner I also made sure to stick to the plan. Friday we just opted for a quick pizza dinner. But luckily Pizza Pizza has some pretty great Gluten-Free options now. I got a small gluten-free pizza topped with pesto, peppers, spinach, zucchini, and olives. I also had some feta on mine. I have been experimenting with goat's milk as an alternative to dairy, and so far so good. I was a little nervous about it. And admittedly my stomach was a little rumbley when I got back to the hotel. But otherwise I was A-okay and my pizza dinner was a success. On Saturday night we opted for Thai food, and I had a seafood/veggie green curry with rice. And on Sunday I went home and had my hubby's homemade chicken and potatoes.

It was my first successful weekend away. My tummy stayed happy and healthy. I think I am finally learning!
