If you guys have been following along, than you know that I have been struggling with an ulcer. The past 7 weeks have been full of tummy troubles and I have been trying all sorts of things to get my digestive system back on track. Vega is one of the products I have been using religiously to fuel during my Marathon Training and to keep my tummy on track, so I was excited to see what this cooking class was all about.
Plus anytime someone wants to cook for me I am pretty much always game!
A couple other blogging buddies were also coming, and it was the very first time I was going to meet Micheal in person. He is totally sweet and adorable, so I am trying to find a way to plan another fitness date with him ASAP.
We started off with a Chocolate Cherry Smoothie. It was scorching hot in the city last week, so a nice cold smoothie to start the night was definitely welcome. And this one tasted like Black Forest Cake! Hello AMAZING!
We also had an Arugula Salad with Mango Vinaigrette. It was topped with their Karmalized Savi Seeds - which I am officially obsessed with. I bought myself a big bag to add to all of salads this week as soon as the class was done. They also added their Tropical Tango Vega Smoothie to the Dressing to create the mango flavor and to add an extra punch of vitamins and plant-based protein. I had never thought to add Vega to my salad before! Such a great idea!
1/2 cup of EVO
1/4 cup balsamic vinegar
1 tbsp of Tropical Tango Vega Smoothie
1 tsp of dried oregano
sea salt and pepper to taste
The main course was an Omega Pesto with Zucchini Linguini. A Spiralizer is on my Kitchen Gadget wish-list. This was such a delicious pasta alternative. My tummy and my tastebuds were VERY Happy!
They had so many great ideas, and it was the Clean Eating kick in the pants that I needed as I continue to tackle these tummy troubles. I made an appointment with a Holistic Sports Nutritionist for August 1st. And I went back to my doctor this week as well. We have switched my meds and I have stopped taking my iron supplements for a little while. We are also doing extra blood work and an ultrasound this week. Hopefully all of this will give me a little more to go on. It is still a work in progress, but I think we are on the right track!
