#WIAW - Healthy Bites and Ulcer Magic



Happy WIAW! If you guys have been following along recently, than you know because of the pain meds prescribed during my most recent round of surgeries, I have ended up with a nasty little ulcer.

FACT: Ulcers and Marathon training don't work that well together. I have been instructed to eat a very specific diet to help reduce the acid in my stomach. But I am the WORST (*seriously the worst*) at following any kind of diet. And post-race I always crave high calorie/high fat food to make up for all of the calories burned while racing. So after my weekend of racing (remember I ran my 1st Triathlon and then a Color Run the next day) I gave in to all of my food desires. I ate pizza on Saturday and then I even went to McDonalds on Sunday. It was so good! But my tummy was so mad!

So this month I am striving to find new ways to keep my tummy and my tastebuds happy while I am training. And hopefully I can say "bye-bye ulcer" soon! Enter the lovely Lindsay and her Healthy Bites! She knows a thing or two about fueling for endurance, so I placed my first order! And I am so excited that she agreed to guest post over here!

Hi there Krysten’s Crew!. My name is Lindsay Cotter and I blog over at Cotter Crunch. I'm a pro triathlete's wife, nutrition manager/fitness consultant, kombucha lover & wanna-be wino who has a joyous passion for GLUTEN FREE cooking! I’d say my best support comes through food and fueling. I’m good at feeding that man, or so I like to think.
In an effort to help James (aka the hubs) fuel properly for pre and post workout, I started making him healthy bites. What are healthy Bites? Glad you asked.

Healthy Bites are my take on functional gluten free bite sized “ball” snacks. Each bite is made with natural, gluten-free and mostly organic ingredients. 
What started off as a little healthy snack option for me and my husband has now turned into my own little business. I am passionate about it and want to share these bites with others…kids, athletes, on the go mom’s, food allergy folks, and more! My mission is to make gluten free and process free food that actually tastes really good. Sheesh, do I sound like an infomercial or what? Haha. 






Anyway, today I wanted to share with you one of my first flavors of Healthy Bites I ever made. Okay it wasn’t the first but it was definitely an original.  

Cherry Banana Crunch Bites


 Recipe Type: snack
Prep time: 15 mins

Total time: 15 mins
Serves: 20-22

Ingredients:
  • 2/3 cup dried cherries (you can use any dried berry really)
  • 2 tbsp crushed dried banana chips
  • 1/3 cup crushed GF crispy cereal (i use Erewhon Berry Crisp)
  • 2 heaping spoonful’s of natural peanut butter
  • 3 tbsp honey
  • 35 grams strawberry protein powder (I used BIOCHEM 100% Whey)
  • 35 grams vanilla protein
Instructions
  1. Grind up cherries in food processor. Makes sure you grind up the rest of your dry ingredients as well. Transfer into a large bowl and add in peanut butter and honey. Mix well, then roll into balls/bites. Freeze right away then store in fridge or freezer for up to 6 weeks to maintain freshness.
