When the event was wrapping up the folks at Canadian Tire told us not to forget our media kit on our way out. At which point I whispered to Christina "I hope that waffle maker is in there". We had a good chuckle, and continued eating our yumminess and be inspired by Tosca. But when we picked up our media kit, there was ACTUALLY a waffle maker in it! Say What?!
I seriously LOVE breakfast food. And we regularly have Breakfast for Dinner around here. Pancakes, Eggs, Waffles, Hash Browns, YUM! Breakfast is my favourite meal of the day. So getting a waffle maker meant a whole new realm of Breakfast Goodness!
Over the long weekend I experimented with a Cornmeal Waffle Recipe, and it turned out surprising well. Not sure I would categorize this as super healthy...But I would categorize it as super delicious!! And according to my MyFitnessPal Calorie Calculations they are approx. 158 calories each with 9g of fat. (not too shabby, right?!)
Cornmeal Blueberry WafflesIngredients:
1 3/4 cups of whole wheat flour
3/4 cup of yellow cornmeal
1 tbsp of sugar
2 tsp of baking powder
1/2 tsp of baking soda
1/2 tsp of salt
2 1/4 cups of buttermilk
1/4 cup of coconut oil
3 large eggs
1 tsp of vanilla
1 pint of fresh blueberries (rinsed)
- Mix all of the dry ingredients together in one larger bowl (flour, cornmeal, sugar, baking powder, paking soda, salt)
- Mix all of the wet ingredients together in a smaller mixing bowl - whisking vigorously (buttermilk, coconut oil, eggs, vanilla)
- Combine the contents of the two bowls, stir lightly. Some small lumps are good.
- Oil the Waffle Maker with coconut oil. Ladle on 1/3 a cup of the batter, sprinkle with blueberries, close and cook. (Note: on my waffle maker the light changes to green when it is ready so I have no good tips about timing here)
