Cranberry Strudel Muffins
*Recipe makes 1 dozen, and each muffin is approx 200 cal*
Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
1 tbsp baking powder
pinch of salt
2/3 cup of brown sugar
1 cup almond milk
1/4 cup of coconut oil (in liquid form)
1.5 cups of cranberries (frozen)
1 tsp cinnamon
2 tbsp brown sugar
- In a bowl combine flours, baking powder, and salt
- In a separate bowl mix together the egg, almond milk, brown sugar, and oil
- Combine flour mixture and egg mixture together and add the cranberries
- Portion out batter into a muffin tin
- Mix together the cinnamon and the brown sugar and sprinkle over top of each muffin
- Bake in a preheated oven at 400 F for 20-25 min.
