#WIAW - Cranberry Strudel Muffins

It is What I Ate Wednesday over at the lovely Peas and Crayons. And since I have been off for the last few weeks recovering, I have had some time to revisit my love of baking. So I have a yummy healthy muffin recipe to share with you lovely folks today.

Cranberry Strudel Muffins

*Recipe makes 1 dozen, and each muffin is approx 200 cal*

Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
1 tbsp baking powder
pinch of salt
2/3 cup of brown sugar
1 cup almond milk
1/4 cup of coconut oil (in liquid form)
1.5 cups of cranberries (frozen)

1 tsp cinnamon
2 tbsp brown sugar

  1. In a bowl combine flours, baking powder, and salt
  2. In a separate bowl mix together the egg, almond milk, brown sugar, and oil
  3. Combine flour mixture and egg mixture together and add the cranberries
  4. Portion out batter into a muffin tin
  5. Mix together the cinnamon and the brown sugar and sprinkle over top of each muffin
  6. Bake in a preheated oven at 400 F for 20-25 min.
Enjoy!
